These red velvet cookies are soft, rich, and so easy to make. The dough felt a little soft at first, and I debated chilling it — but I skipped it because I just wanted cookies, and I’m so glad I did. They baked up beautifully, held their shape perfectly, and came out thick and tender. I kept things simple and used Valentine M&M’s instead of extra mix-ins, pressing a few into the tops so the colors really popped. I also did my usual trick of shaping the cookies with a cup right when they came out
